Blueberry Coffecake

HEALTHIER OATMEAL STREUSEL BLUEBERRY BREAKFAST CAKE
Tender blueberry coffee cake with crunchy, oatmeal streusel topping. Healthy and delicious breakfast cake.

Ingredients
    Blueberry Cake:
  • 1 1/2 cups white whole wheat flour, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, separated
  • 1/2 cup solid coconut oil (or butter or shortening)
  • 1 cup sugar
  • 1/3 cup almond milk
  • 1 teaspoon vanilla
  • 1 1/2 cups blueberries, washed
  • Oatmeal Streusel:
  • 1/4 cup raw rolled oats
  • 1/2 cup white whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil, melted (or butter)
Instructions
  1. Grease an 8" X 8" square pan. Or line with parchment paper. Set aside.
  2. In a small mixing bowl, beat egg whites until stiff. Set aside.
  3. Measure 1 1/2 cups white whole wheat flour into a medium sized mixing bowl.
  4. Set aside 2 tablespoons of that flour. (To flour berries with later)
  5. Add baking powder and salt to the flour in the mixing bowl and stir well.
  6. In a separate mixing bowl, cream solid coconut oil together with sugar with an electric hand mixer.
  7. Mix in well beaten egg yolks.
  8. Add dry ingredients alternately with milk, beginning and ending with flour mixture.
  9. Flour berries with the remaining 2 tablespoons of flour. Set aside.
  10. Gently fold egg whites into the batter, then add vanilla and floured berries.
  11. Spoon batter into prepared pan.
  12. Separately, in small mixing bowl, stir together rolled oats, flour, brown sugar and melted coconut oil.
  13. Sprinkle streusel topping on of blueberry batter.
  14. Bake for 40 minutes at 350° or until golden and cake tester comes out clean when tested in the center.

Mango Apricot Smoothie

Directions

Place the soy milk, lemon juice, vanilla extract, mangoes, and apricots in a blender. Process 8 seconds. Add the ice cubes and process 6 to 8 seconds more, until smooth. Pour into tall glasses, garnish with lemon if desired, and serve immediately.

Whole Wheat 30 Minute Cinnamon Rolls

I was a little skeptical when I first found this recipe. I found it on halfbakedharvest.com. I changed a few things she did, but I think they turned out really good. Without my kitchenaide I get tired of kneading dough...I was excited this recipe required no kneading. It seriously was 30 minutes from start to finish. :)

Ingredients:

Dough:
3 cups flour (2 cups whole wheat 1 cup white)
2 Tbsp. brown sugar
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups buttermilk

Filling:
melted butter (you choose how much)
1/2 cup brown sugar
1 Tbsp. cinnamon

Cream Cheese frosting

Instructions:
Preheat oven to 375 F. Spray muffin tin with cooking spray. (You could probably make them on a jelly roll pan or something else, but I followed her suggestion)

To make the dough place the flour, brown sugar, baking powder, and salt in a medium sized mixing bowl. Stir in the buttermilk until a dough ball forms. Turn out onto a heavily floured surface (make sure there is plenty of flour, the dough can be pretty wet). Roll out into a rectangle and proceed like normal cinnamon rolls. Bake for 12-14 minutes or until browned. Spread icing on top and enjoy! :)

Banana Bread Pancakes

3 cups all-purpose flour
½ cup sugar
1½ Tbsp firmly packed brown sugar
2½ tsp baking soda
2 tsp ground cinnamon
½ tsp salt
5 ripe bananas, mashed
(2 - note below) 1 cup buttermilk
¼ cup butter, melted
Pancake syrup

Stir together flour, sugar, brown sugar,
baking soda, cinnamon, and salt in a large
bowl. Whisk together banana, buttermilk, and
melted butter; add to flour mixture, stirring just
until combined. Spray griddle or large nonstick
skillet with cooking spray; preheat to medium
heat. Drop batter by ¼ cupfuls onto griddle.
Cook until bubbles form on tops of pancakes
and edges look dry; turn, and cook until
browned. Serve with syrup.

These were actually really yummy.  The recipe called for 1 cup of buttermilk, but they were really really thick, so I think it was supposed to actually have 2 because I had to water it down a lot.  Good recipe though.

The Best Banana Muffins, no egg

Banana Muffins
 
1 ½ c flour
1 c sugar
1 t baking powder
1 t baking soda
½ t salt
¼ c vegetable oil
¼ c milk or non-dairy milk
3 medium mashed bananas
1 t vanilla extract
Using a stand mixer or electric hand mixer, blend the bananas until smooth.  Add oil, milk and vanilla mixing until combined.  Slowing add in the dry ingredients, while mixing the batter.  Spoon batter evenly into 12 greased muffin tins.  Bake at 375o for 16-20 minutes.  Cool in muffin tins.  Makes 12 muffins

Pumpkin Pancakes

Ingredients 1 1/4 cups all-purpose flour 1/4 cup white sugar 2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 cup milk 1/2 cup pumpkin puree 1 egg, beaten 1 tablespoon vegetable oil Directions Sift flour, sugar, baking powder, cinnamon, and nutmeg together in a bowl. Whisk milk, pumpkin, egg, and oil together in a bowl. Pour milk mixture into flour mixture and stir until just moistened. Batter will be slightly lumpy.

Breakfast casserole

Ingredients 1 pound ground pork sausage 6 slices soft hearty white bread One 8-ounce package shredded Cheddar cheese 8 large eggs 2 cups milk 1 teaspoon dry mustard 1/4 teaspoon salt 1/2 teaspoon seasoned pepper Directions Preheat the oven to 350 degrees F. Spray a 13- by 9-inch baking dish with nonstick cooking spray. In a large skillet, cook the sausage over medium heat, stirring frequently, until browned and crumbly, about 10 minutes; drain well on paper towels. Cut and discard the crusts from the bread. Cut the slices in half, and arrange in a single layer in the prepared baking dish, cutting pieces to fit as necessary to cover the bottom of the dish. Sprinkle with the sausage and cheese. In a large bowl, whisk together the eggs, milk, mustard, seasoned salt and pepper; carefully pour the mixture over the cheese. Bake casserole until set and golden, about 40 minutes. Let stand for 10 minutes before serving.
